4 Large Baking Potatoes, already baked
4 tbsp. Oil
2 tbsp. Parmesan Cheese
1/2 tsp. Salt
1/2 tsp. Garlic Powder
1/8 tsp. Pepper
8 Strips of Bacon, cooked and crumbled
1/2 cup Sour Cream
4 Green Onions, chopped
2 cups Shredded Cheddar Cheese


Cut the 4 already baked potatoes in half
lengthwise. Scoop out the pulp leaving a
1/4 inch shell. Place potatoe skins onto
a greased baking sheet. In a small bowl,
combine oil, parmesan cheese, salt, pepper,
and garlic powder. Brush oil mixture over
both sides of skins. Bake at 475* for 7 minutes.
Take out, turn skins over and re-brush the
bottom of the skins. Put back in oven and bake
until all crisp. Remove from oven, turn again,
and sprinkle inside of shells with crumbled bacon
and cheddar cheese. Bake another 5 minutes.
Serve immedietly with Sour Cream and chopped
green onions. Makes 8 skins.
