PEAR & CREAM
BREAKFAST CAKE

INGREDIENTS:

1 29oz. can Pear Halves in Heavy Syrup, undrained
1 8oz. pkg. Cream Cheese, softened
1/4 cup Apricot Preserves
2 tbsp. Butter or Margarine
1 9oz. Yellow Cake Mix
2 tbsp. Oil
1 Egg
1 tsp. Ground Cinnamon

DIRECTIONS:

Pre-heat oven to 350*. Drain pears, keeping
1/2 cup of syrup. Slice pears and place on bottom
of a 9x9 baking pan. In a large bowl beat cream
cheese, preserves and butter on medium speed
using electric mixer until well blended. Pour this
mixture on top of the pears. In another bowl, mix
cake mix, reserved pear syrup, oil, egg and the
cinnamon on low speed until well blended, then
pour this mixture over the cream cheese mixture.
Bake for 35-40 minutes or till top is golden brown.
Serve warm for breakfast or brunch!
